Is the hardware/software already purchased? SBS 2003 OEM'd on whatever server you want may save some $$$ over regular Windows server + CALs, and gives you Exchange as well.
SBS is preconfigured to do everything on one box. Of course if you're used to larger environments, you'll have to learn (force yourself) to use the SBS Wizards for certain tasks.
