I belive you can achieve this with Symantec BESR (Backup Exec System Recovery) 8. This is a stand-alone product that will let you backup/clone to dissimilar hardware. You can also easily make them into VM images. Since it's going from a desktop you could download the 60 day trial for the desktop version & use the recovery CD on the server to restore it. If it's doesn't do exactly what you need there's no loss.
