Stu had a checklist, of sorts, a while back in his W2KServerNews newsletter. I use that as a starting point of daily, weekly, monthly, etc things the customer should consider. Once they narrow down what they what to document then we go to work analysing their current procedures, if any, and work them to a final document.
BTW, if you are to be SOX compliant then all that stuff needs to be thoroughly documented, signed off and reviewed to pass the IT Governance audit.
