I've done this using a combined CAS/HUB servers, and a separate mailbox server. Did the upgrade class you took recommend differently? Both installs I have done had clustered mailbox servers, and a 2K7 mailbox server in a cluster can't have any other roles installed.
E2K7 requires a HUB server to be installed first, so install IIS and RPC/HTTP Proxy services, then the CAS/HUB roles. Purchase a SAN/UCC SSL certificate and configure OWA, Activesync and Outlook Anywhere. As long as everything is working ok and your clients can connect, and SMTP traffic can route through the HUB to your 2K3 server, install your mailbox. Depending on your client base, you will have to choose to install a public folder store or not (if you have Outlook 2003 or below you will need a public store), and replicate/migrate your Pub Folders and GAL's.
