You can add the memory, it's just not going to see/use more than about 3.5GB. If you're going to make a change to 2008, then you will need to get the 32bit enterprise version or 64bit version to see/use more than 4GB of mem. My feeling would be to skip the step of moving to another interim 2003 version.
