Um - there won't be any such option per se. There will be a SKU which will only have the Hyper-V role available (no other roles). I believe that this will mostly be sold through OEMs (similar to say Windows Storage Server). You'll buy a box that will come with Windows Server 2008 + Hyper-V, probably in conjunction with shared storage (or something to connect you to your existing SAN) and start putting VMs onto it.
