We're using MOM 2005 to monitor the virtual machines. We use a combination of Dell OpenManage, Solarwinds Orion and the native VMware tools to monitor the hardware and ESX. MOM has a non-insignificant cost, but the others are free (OpenManage, ESX tools) or reasonably cheap (Orion).
