I wouldn't stop your SQL Server services.

If the Acronis product /doesn't/ use the VSS writer support that SQL Server 
has, then simply schedule a backup to disk inside SQL Server (which will also 
truncate the transaction log), and then use Acronis to backup the server 
(excluding the active database and log files)
