Depends on what your DC is made of. If it's a good aged Cheddar, than it can survive in a room temp crate for up to a month with only minor mold on the rind, which can be safely scraped off on receiving by the vendor. However, if you've crafted your DC out of a softer cheese, such as a Gouda or (heaven forbid) a Roquefort, you may find that you have only a week or two in a shipping crate at typical tolerances before the flavors and aromas are just...off.
Just make sure you pair it with a proper wine.
