Go to EMC's Powerlink website https://powerlink.emc.com and sign up as a customer. They have a good selection of resources regarding technologies and SANs
Have a look at the Brocade stuff as well. These both have online (and free) intro courses to SAN technology and FC fabric technologies. There is also a Navisphere simulator out there that you can use to poke about under the hood and try creating LUNs, RAID groups etc without risking your prod system.
