VMWare Server and ESXi are very different beasts.

VMWare Server runs as a program under a host OS (i.e., MS Windows or
Linux). You can access the GUI management console right on the host.
VMWare Server has more in common with VMWare Workstation than ESX.

ESXi loads and runs on the "bare metal" -- it's self-hosting and
self-booting. (I believe it's actually using a minimal Linux system,
but since you're not running any apps on the host OS, it mostly
academic.) Management is primarily done via over network, via
"remote" tools. Since there's no host OS underneath it, it needs less
hardware (or runs faster on the same hardware), but is pickier about
drivers and such. And needs a dedicated machine, of course.

I believe both are still "free" (pay no money for license seats).

I believe the payware ESX is more-or-less the same software as the
"free" ESXi, but with additional capabilities, fewer limits, longer,
lower, wider, etc.
