I completed the server migration on New Years, relatively painlessly. Thought I'd throw a tidbit of info out there to whomever may want to run RoboCopy from a 2008 machine in future. I decided to map the source (remote) and found that the elevated command prompt couldn't see or access the mapping I'd made in explorer as the same user, non-elevated.
