Once you give them read permissions on the shared folder, make sure that it 
applies to that folder and not follow through to all child objects within the 
folder.  When they see the other folders and then try to open them then they 
receive an access denied error.

Another option would be to go into Active Directory, then the user's account.  
Go to the Profile tab and setup a direct path to the folder that you want.  
When the user logs in, they will have only that folder listed and can't get to 
the other folders.  We do this to limit who can see what on our shared drives.

You could always share out the required sub-folder as a new share.
