Jailbreaking. Then install OpenSSH and sbsettings for easy enabling/disabling. Also throw on netatalk for Appletalk browsing of the filesystem. Heck, set up a FTP server on it if you want. It runs a variant of OSX, so its unix, you can get a terminal program and get to a bash prompt. The possibilities are endless with a jailbroken iphone/itouch
