How many mailboxes and how large are your information stores currently?

There is really no problem with doing this. You just need to plan properly.

Microsoft has great planning and deployment document for Exchange 2007.

Hi all,

We are planning to migrate to Exchange 2007 from Exchange 2003. Cause of
budget constraints, we will have a single server installation, a new box
handling all the server roles. Any ideas for or against this kind of
deployment and what mail anti-spam software works best with Exchange
2007? I will appreciate sites that have info on this kind of deployment.
