Here is an easy way. I use diskpart.

1. Power off the VM.

2. Resize vmdk.

3. Add this vmdk to another machine and use diskpart.

4. Remove this disk from this VM(where you added it as second disk).

5. Power on the source VM and you are done!

Subject: VMware - Vcenter resize?

The group that configured our VMware infrastructure created vcenter as a
virtual machine. It was only sized at 20GB. We are continually running out
of space. Anyone know what would be the easiest way to resize the VM?

I have resized VMs in the past with no issues but am not sure how to do the
VCenter server.
