OK so are the VM's Server 2008 or Vista? If so yes I have and do, some daily and some weekly. I did have to do a little work to get it up and running. The 2008/Vista Backup works pretty well, however I had to set it up and schedule it through the command line and task scheduler. It was not that difficult. I have tried the restore several times just to make sure it works. And yes since you are running the built-in backup program you can run it from a live VM without shutting it down.
