I don't have a direct answer for this, but it should be do-able as you suggest.
VMWare workstation, or Hyper-V, or Virtual Server, or even Virtual PC (or any of the other virtual solutions out there) are definitely your friend for setting up things like this. Recreate the entire environment virtually and test like crazy. If you use a VM product with which you can create child VMs from parent templates (I don't think Virtual PC does this), the time to create the virtual test environment is drastically reduced. And snapshot all the time before you make big changes...
