We’ve been using Pervasive SQL for years and our backup routine has always
been to close any apps accessing the database, copy the underlying data
files out and then restart any of the apps.  Restore is just as simple.  

If you need to have the apps running and the database live at the time of
backup, then you need to put the files into Continuous Operation Mode
(basically makes delta files) and then copy out the files.  I've never had
to do this because our application is such that we can just tell users not
to have it open for a while but here's some more info on it:
