I have 'on fire' experience with LCS2005sp1 and get the same with implementing a migration to OCS2007r2. I strongly recommend you buy the updated OCS2007r2 resource kit. It has a ton of documentation and scripts that will help things out.
Training would be cool and I wish I had some. One of the things they mentioned in the virtual launch day was that they were revamping the training material and tests to cover the r2 release. IN reality r2 is a sort of different product like lcs2005sp1 was from lcs2005.
