Actually, RU5 is the first time I've been able to install SEP on my 2008 servers without it breaking something.

The antivirus part is pretty much the same as SAV 8, 9 or 10 (which is fairly trouble free). If you do a custom install and only install the antivirus part (which is what Symantec was saying to do with servers anyway unless they have changed their tune) you would probably be fine.
