Or Openfiler, don't know if it can run from a flash drive or not, haven't 
checked.
I picked it over FreeNAS at home as Openfiler had VMtools.

The install takes up a couple of gig if I remember correctly.

Look into FreeNas.  Its BSD based, so I think you are going to lose 
openmanage, but the OS will run off of a Flash Drive.
 
I installed and ran it once, I had a P3 933, about 8 IDE Drives in RAID 0 
array for a totals storage size of about 200 GB.  It worked, made a great 
ISCSI target.  It was slow as could possibly be (5400RPM Drives) .  After 
I thought about how much juice it was sucking, and heat it was producing, 
I threw it in the trash and went out and bought a USB External drive. 
 
But it was COOL !

Yes, but if I do this I loose about 20GB on each server for the OS, and I 
still have no iSCSI target. This would be ok (not great) if I knew how to 
setup these servers as iSCSI targets.

If they're Dell servers wouldn't you continue to run Openmanage on them?

I?d like to make a couple of old server into iSCSI targets. Anyone know of 
a good way to do this and keep the accountability that comes with Dell 
Openmanage software? I don?t really want to go back down to nothing but 
storage on these servers unless there is a way that I can still be alerted 
in case of a hardware failure.
