A colleague has installed 2008 R2 TS servers into an 03 domain without any issues. I'm an all 08 setup so can only vouch for that.
Apart from needing to run the TS licensing on the 08 servers as you've discussed there should be no major issues. One thing to keep in mind though is changes in group policy from 03/xp to 08/vista. Some of these may catch you out.
