FYI, you may need to reboot after shutting down and disabling the VM service. I know with Hyper-V any machine that is live and shutdown must have the services shutdown or services to restart and then I could copy the vhd. They may have fixed that with R2 and 7. I would hope so anyway. The VHD was listed as in use and unavailable for copying in 2008.
