It's a fully functional server...

The only specific caveat of which I am aware is that if you "tricked" SP1 or 
SP2 into installing on 2008 R2 (which was possible), an upgrade is not 
supported. And OS upgrades underneath the Exchange installation are not 
supported (that is, an OS upgrade from 2008 to 2008 R2 after Exchange was 
installed - but that's nothing new).
