Something similar to this.  We use UltraBac Gold.

We use one of the smaller "flavors" that simply backs up (a real time 
image) and stores ot "somewhere".  It can be restored to a "bare metal" 
system, including a VM (which is already configured and ready to accept 
the image).

For A Few Dollars More (anyone hear whistling?), they have a version which 
will back up a server in real time directly to a VM in a SAN and VM 
system.
