Not sure why you need 5 servers - or do you want 5 IP's on 1 server?? You can isolate users to their own directories with most FTP solutions. A linux box would do this well. If you are looking to run this on a Windows server - IPSwitch's WS_FTP Server is fantastic although a little pricey (http://www.ipswitchft.com/products/WsFtpServer/index.aspx?n=1). FileZilla also works well for the price - Free!

Can you run 5 different instances of FileZilla Server in 5 different VMs, each of which can only "see" what you want to expose?
