What I've seen recently is that companies want you to fill out an application along with submitting your resume. On the application there is normally a spot where they ask if they can contact your current employer, and you can simply say no. But you definitely want your complete experience to be reflected on your resume, and if you've been with your current employer for any amount of time, leaving them off would be a pretty big employment gap.
