I'm not too familiar with Windows 2008/Windows 7 policies, but with Windows 2003 you don't specify the %username% variable when entering the folder redirection paths as the policy adds it automatically (when the option “Create a folder for each user under the root path” is selected).
I'm sure it was a typo, seeing as your error text had the correct format, but your UNC path needs backslashes not forward slashes.
