Drive size is essentially irrelevant, the smaller drive will determine the overall size of the mirror. You may then be able to recover the unused disk space when it is moved to the other machine with diskpart.
Ben's comment is spot on, though. If all else is equal, except drive size, I'd be inclined to give the mirror a try, it's free and fast. The data can be written without any downtime. You only have downtime related to inserting and pulling out the drive. With an imaging product, you'll be subject to downtime while you're making the image, and speed was one of your stated goals...
