My very first job was in a fish house (Pat & Mick's in New London, NC). This is very close to the recipe we used: http://www.slashfood.com/2009/01/03/north-carolina-bbq-slaw/
Except instead of ketchup/BBQ-sauce, we used tomatoes. Pat & Mick's seated 900...yes, 900 people. Folks came from all over the Piedmont. On Friday and Saturday nights, we'd turn the tables 4 or 5 times. We'd make 175 GALLONS of red slaw a night. Regards, Michael B.
