Second Copy will do this.  Also will run as a service.

Assuming you didn't want to shadow copy the whole drive, or run a "proper" 
backup every X minutes, what options have you used to back up a critical file 
every X minutes?

A scheduled task with a RoboCopy job would probably do it, just curious if 
there are any smarter/better options.
