Setup the desktop inside the office they need to connect to with a static IP. Change its RDP listening port to something like 3390, port forward 3390 to this IP and then setup the RDP app on the IPAD to connect to 3390.
I don’t know what RDP app on the IPAD will allow you to specify ports for RDP if any, you will want to check around on this.
