You just need to edit the Format and Partition step in the task sequence. 
Unless I'm not understanding exactly what you mean...

By default, Win7/Server2008R2 will have two partitions already - a WinPE 3.0 
recovery environment, plus the C: drive.

You can add in up to two additional primary partitions pretty easily...

A few weeks ago I asked about what to use to deploy images to workstations. The 
overwhelming answer was MDT 2010, and WDS. I installed both products, capture 
images, and deploy. The one issue I am running into on the deployment front is 
the Dell Diagnostic Utility partition. I would like to keep this partition 
intact if possible.

I have read and Googled quite a bit, but can't find a solution. Does anyone 
here have a solution?
