Honestly, if Miansi or Stanek Wrote the book, its good to go, I have almost two shelves of books from them that I have read, and never gone wrong on the implementation and setup using what they have imparted knowledge wise.

The Pocket Consultant books aren't really books that you "read" so much as pull off the shelf now and then. They also vary quite a bit in quality so beware. I happen to think my book is a good one there on your list, but, as far as the general windows one, I'd opt for a 2008 R2 book over a straight 2008 one as a matter of it just being newer.
