Nice problem! 

...Depends what you mean by color. Jops can provide a lightness histogram and 
waveform. Also a vectorscope that expresses the hue and saturation combined. 

If it is just hue that you are interested in... You might try the following: 
From the top of my head: 

- Factor the rgb by the saturation values. This Will return an image in which 
the unsaturated values are entirely black. These need to be removed so as to 
remove all perceptually neutral values from consideration. 

- Then ColorSpace conversion to HSV. 

- Plot the H channel as a histogram. This will give you an indication of the 
hue distribution in the image. 

Doubtless there is a slicker method.
