Hi Daniel, that's quite strange, your setup should be fine. (requirements are same as for Ubuntu in VM), 2GB ram, 1-2 cpu cores should be more than enough. Make sure you dont overcommit memory- if you have 4gb, dont assign 4gb to the vm, 2-3gb max.
Additionally, I can find some "ubuntu virtualbox slow on win7 host", so you might wanna research on that.
