you can refer to nutch-default.xml and edit the value of plugin.includes property, or override it in nutch-site.xml.

I can see from the nutch.war web-application that the plugins are all in the WEB-INF/classes/plugins directory, but there seem to be a large number of them. Can anyone offer me guidance as to the minimal plugin set required to enable a search of an existing index? (For example, I believe the parse-* plugins may be used when crawling, but not when searching an index and so I don't need them in my war file). Cheers, Ian.
