There is no spoofing support in om_udp. In theory it wouldn't be very hard to 
implement. Feel free to file an enhancement ticket:
https://sourceforge.net/apps/trac/nxlog-ce/

The sender address is stored in the $MessageSourceAddress field. This can be 
used to put it into the message so that the receiver side can extract it. This 
is a possible alternative in case this can work with your setup.
