This is not really file rotation but a dynamic filename setup just as in
the example using $Hostname at
http://nxlog.org/nxlog-docs/en/nxlog-reference-manual.html#om_file_config_example_rotate1

What you should do is parse $Process in the input and use something like
this in om_file:
 File "%OUTDIR%\\" + $Process + "_"+ strftime(now(), "%Y%m%d")+".txt"
