If you want to set up your own VPS, I recommend SiteHost, www.sitehost.co.nz. Otherwise you could try http://25mail.st, they're a NZ based company (in Cambridge), but you'd have to ask them if they could put you on a NZ based server as I think most of their customers are overseas.
