Many (if not most) of the OAE developers on the Sakai Foundation team have moved up to Maven 3.0.x.
I used to make certain I was setting MAVEN_OPTS, but since I've been on Maven 3, not even that has been necessary. The other advantage of using Maven 3 is that it allows you to resume a failed build where it left of, so that even if you do have another OOM error, you'll be able to continue. I wish I had a better answer for you than that, Josh. I haven't seen an OOM in my environment in more than a year.
