Memory mapping is disabled by default contrary to what the {{FileStoreBuilder}}
{{build()}} Javadoc says.
We should align this to make the default consistent with the documentation and
to the behaviour from {{oak-segment}}.
As most places (notable {{SegmentNodeStoreService}} explicitly set the correct
default value I don't expect much impact of such a change.
