The oak-store-document module currently uses fongo mostly to intercept calls
and inject test specific behaviour like throwing exception in certain cases.
IIUC, testcontainers.org is just a simple way to provision a test database but
it wouldn't help with the tests in Oak that currently rely on fongo.
