The preferred way of doing that is now in Python. There isn't much documentation yet. Sample scripts are in the ocropy subproject. We'll first be commenting those scripts better and then hopefully create additional documentation. There are also some powerful labeling, debugging, and training tools, but they also need to be documented better.
