You will need CallerID.  This info is sent between the first & second rings
(I think).  You ought to be able to buy modems that recognise this info.  Or
you can hunt for a CallerID unit that displays this info as the phone is
ringing.

Certain voice modems allow you to capture the conversation.  I used to have
one which, through its built in software, captures the voice into a SND
file.  I think the software also acts as a voice mail answering machine.
For a heavy duty application, you are best to get a voice mail card - most
models can handle multiple lines.

There are several ways to do this, but I think the easiest is to buy a phone
magnetic pickup.  This picks up the voice signals.  You can connect the
output of the pickup to a preamp/amp and to speakers.

If you employ a technique that connects directly to the phone line, you will
basically need to get a telepermit for your equipment - and you will need to
be aware of the numerous regulations that govern such equipment.
