Yes I believe they would, In fact we were thinking of doing something along this line. I know if another company did it *I* would buy the product, would make it all kinds of neat things you can do with it....we are releasing a monster manual for Cityscape (called 'The City Zoo'), and it will contain new monsters and new definitions of some SRD monsters....the same with the 'Creature's Guide for the Trius Campaign Setting'

Finding people who would donate their time would be very difficult - those who are most interested would already have been contaminated by the WotC material, but it is definitely doable, especially if you get creative when looking for sources. I might be willing to give it a try.
