make LINKSTATIC=1 (or, for raw cmake: cd build; cmake -DLINKSTATIC=1 ...)
This *almost* completely works on OSX. Last I checked, it manages to find and use the static libraries for the vast majority of dependencies. There are one or two that still end up linking against the dynamic libs IIRC, I was having trouble tracking down what was going wrong with those. I don't remember the state of how this does on Linux.
