Hi Cristine,
When you install OpenOffice it stores a directory
*OpenOffice.org 3.1 (en-US) Installation Files*
with the installation files.
If you have moved or deleted this directory you
have to uninstall it from the Windows Control
Panel or use an third party cleaner package e.g.
ccleaner.

OpenOffice.org --> Memory ...
OpenOffice.org Quickstarter and deselect
_Load OpenOffice.org during system start-up_
If you're running Windows open the Task
manager and end the soffice processes or
just reboot your system.
After this your able to uninstall
OpenOffice.
