What to use really comes down to which converter produces the best output. LaTex appears to be the default, so that's a good starting point. Beyond that, I would suggest starting here: https://pandoc.org/getting-started.html, then see if there are places you can get questions answered. I'm afraid we're all going to be at the same starting point on this.
